Thin blade, long reach. A bit over ten inches, narrow, steady in the cut. Made to move through salmon or ham in one stroke, no sawing, no tearing. It’s forged from a single piece of stainless steel—KNIndustrie and the Berti workshop together. Frosted finish, almost matte when the light hits. Handle is slim, not bulky, the squared bolster works like a thumb stop. Weight? Around 280 grams, close to 10 ounces. Enough to feel present, not so much that your hand gets tired halfway through. On smoked fish, or cured meats, the slices come off smooth, ribbon-like. Handmade in Italy. Wash it warm, dry it right away. Dishwasher safe, though most people I know keep blades like this out of the machine.
