The Global G-21 boning knife is ideal for working with both bone-in cuts of meat and for fileting fish. The long, narrow and flexible blade ensures precise cuts, while the bolster between the handle and the blade adds extra safety when handling slippery raw ingredients. Crafted from all-stainless steel, the knife features a one-piece seamless construction that makes it exceptionally hygienic and easy to clean. The signature dotted handle is filled with sand to ensure a perfectly balanced grip. Designed by Komin Yamada, the knife performs brilliantly in both home kitchens and professional settings. Each Global knife is handcrafted in Japan, drawing on the tradition of samurai sword making. Forged from Cromova 18 – a high-grade, high-hardness stainless steel developed exclusively for Global – the blade offers excellent resistance to rust and corrosion. Thanks to its steep, acute cutting angle, the edge stays sharper for longer, delivering performance that surpasses conventional kitchen knives.
