Some cuts need more than a chef’s knife. This one has the extra weight—close to ten ounces—and a blade just under nine inches. Enough heft to move through roasts without hacking, but still slim enough to serve at the table. Made from a single piece of stainless steel with a soft frost finish, it comes out of the KNIndustrie × Coltelleria Berti collaboration in Italy. The bolster squares off under your thumb; the handle runs light, easy to hold without slipping. It works best on cooked proteins—beef, lamb, chicken. The slices come off clean, not ragged. Somewhere between a slicer and a chef’s knife, with a balance that makes it useful day to day. Handmade in Italy. Warm water, towel dry. Dishwasher safe if you insist, but handwashing keeps the edge longer.
